FUMI creates authentic Japanese dining experiences for customers

FUMI, a new Japanese eatery, seeks to share the finest Japanese cuisine in Hong Kong within a space adorned with Japanese art, furnishings, and tableware. They offer a range of dining experiences, from elaborate omakase and kaiseki dinners to individual dishes and set lunch options.

Situated in California Tower, FUMI sources the highest quality seasonal ingredients directly from Japan daily. Flown in and delivered straight to their kitchen, these ingredients are often prepared and served within hours of being harvested, guaranteeing freshness in their sushi, sashimi, omakase, and kaiseki preparations, as well as a variety of seasonal menus.

FUMI’s rotating menus will showcase the diverse culinary traditions and techniques of different Japanese regions, presenting dishes that are unique to Hong Kong. While some of these menus will be curated by FUMI’s team, others will be crafted and presented by renowned guest chefs from Japan.

“Omakase,” meaning “I’ll leave it up to you,” is a dining experience where guests entrust the chef to create a personalized menu. These menus are rarely fixed and change daily based on the freshest ingredients available that day.

Similarly, FUMI’s kaiseki menu will be regularly adapted to showcase seasonal ingredients. The kaiseki experience at FUMI is a celebration of Japanese artistry, with each course meticulously presented on handcrafted tableware sourced from artisans across Japan. Multiple kaiseki menus are available, featuring exquisite dishes like anglerfish liver, oden (a hotpot with a broth made from two types of bonito flakes), and generously sliced A4 Miyazaki beef sirloin steak served with a homemade sukiyaki sauce, Japanese-style poached egg, zucchini, grilled tofu, small onion, shiitake mushroom, and cherry tomato.

Signature a la carte offerings include fresh soy milk skin and sea urchin with wasabi starchy soy sauce, a premium sea urchin sushi trio, and Miyazaki beef tenderloin tartar.

FUMI’s interior design embodies the elegance of traditional Japanese craftsmanship combined with modern aesthetics. Private dining spaces are separated from the main dining area by classic bamboo screens, while other tables are partitioned by washi laminated resin panels made in Japan. A traditional sushi bar, displaying fresh seafood on ice, spans one side of the restaurant. FUMI’s designers have also created a serene Japanese zen garden on the restaurant’s balcony.

Through its food and ambiance, FUMI aspires to immerse diners in Japanese culture and heritage, highlighting the diversity of Japanese cuisine and its evolution over time. Planned events include celebrations of traditional Japanese holidays with themed menus and cultural performances like Japanese dance, calligraphy demonstrations, and discussions on Japanese food culture.

This dedication to honoring the culture of each prefecture is reflected in FUMI’s name. In Japanese, the character “文”, pronounced “fumi” in English, is a component of the word for culture, “文化,” in both Japanese and Chinese.
